Apple, Date and Walnut Loaf

My other half is very tight a great grocery shopper.  He often brings home stuff with reduced labels on them and leaves me to do something quick with them!

This week it was organic apricots and dates – both 30p a packet (instead of the usual £2.59!!)

This morning I’ve used the dates to make this lovely Date, Apple and Walnut loaf.  It’s a recipe I’ve adapted from the wonder Delia Smith.  I’ve been lucky enough to have an apple left from my in-laws’ tree (collected from the tree last Autumn!) and free range eggs from my uncle down the road.  He’s got 5 hens, all with names, some rescue battery hens – I’ve never tasted more beautiful eggs!  If you have the chance to buy your own, locally laid free range eggs, grab it with both hands!

Date, Apple and Walnut Loaf

You will need…..

1 small cooking apple

110g Soft Margarine

150g Soft Brown Sugar

2 eggs, lightly beaten

110g Wholewheat flour

110g Plain flour

1 ½ tsp Baking powder

110g Walnuts, roughly chopped

75g pitted Dates, roughly chopped

1)                Preheat oven to Gas mark 4, 3500F, 180C

2)                Grease a loaf tin (with base measurements of 8 ½ x 19 cm)

3)                Cream the margarine and sugar, add the eggs

4)                Add the sifted flours and baking powder

5)                Peel, core and roughly chop the apple.  Then add to mixture with the Walnuts and Dates.

6)                Plonk Transfer the mixture to the prepared tin.  Spread evenly and bake for 1 hour (or until loaf feels springy in

centre and a skewer inserted in the middle comes out clean).

7)                Devour!!!!! Yummy!!!!!
